Our matcha was selected as an ingredient for the Kyoto souvenir of the 21st century, the luxury anpan Shizuyapan

Seventy years in Kyoto: a new challenge by Shizuya - Shizuyapan

Shizuyapan is a new luxury anpan brand which collaborates with various types of food and culture unique to Kyoto. Shizuya, the company which sells this anpan, is a famous bakery in Kyoto which first opened in Kawaramachi, Kyoto in 1948. They now run 23 directly managed stores.

For the Shizuyapan lineup, they chose to use Yamamasa Koyamaen's KOI MATCHA (thick tea) matcha, which allows customers to taste the limitless rich deep flavor of matcha.

"The bread we make of course tastes good but is also healthy and safe to eat," says Mr. Torii, the plant manager of Shizuya. At the main plant, bread to be sold at Shizuya bakeries are baked every day. This plant was also the place where Shizupan was invented. It is in Shizuya's culture to listen to ideas from the plant, and because they have a history of being loved by people from Kyoto for making tasty safe bread for 70 years, so they were able to create new products loved over successive generations.



"Products with matcha must use the finest grade available. More than anything else, the matcha has to be used abundantly. Yamamasa Koyamaen's matcha cherishes tastiness. The color is also beautiful. The color and flavor are still clearly present even after baking." The matcha Mr. Torii chose was 100% stone mill ground Uji matcha. It is not matcha for cooking, but rather a higher quality matcha for the tea ceremony (for drinking). KOI MATCHA uses twice the amount of matcha compared to general matcha products. With that, they were able to create a matcha anpan that could have only been made in Kyoto with an amazingly rich and flavorful matcha taste.
