A popular cream puff of Westin Hotel Tokyo

 The Westin Hotel Tokyo is a leading European style hotel located in the beautiful green city of Ebisu. The Westin Deli inside the hotel offers a very popular cream puff that sells out in the morning every day. There was also a limited offer of a Matcha Cream Puff. This was their first challenge to ever use an ingredient other than fresh cream and custard cream.

Offering matcha with something special

 Mr. Suzuki, the executive pastry chef at the Westin, has long had an idea about creating a matcha cream puff. For a new flavor, he wanted to create "something that is familiar but also special," and gathered many types of matcha. He chose Ogurayama of Yamamasa Koyamaen because it went well with the flavor of the cream.

Ogurayama matcha has a distinctive flavor and rich deep taste

 Ogurayama is made with raw leaves grown in Kyoto prefecture. It is both a classic matcha and a pround brand of Yamamasa Koyamaen used to make the light tea used in the world of the tea ceremony. It comes with a distinctive matcha flavor called ooika(covered aroma) and rich deep taste with a beautifully green color. I was able to create a puff with a crispy dough and an authentic matcha aroma.
